What spanakopita actually is

Spanakopita (say it “span-ah-KO-pee-tah”) is Greek spinach pie. Sheet after sheet of phyllo — paper-thin pastry, brushed and layered until it bakes into something shattering-crisp — wrapped around a filling of spinach and feta, with kalamata olives folded through for salt and depth.

It is not a quiche and not a spinach turnover. The inside stays creamy and savoury; the outside crackles. In Greece it is everyday food: breakfast, a snack, a light lunch, a side next to a salad. Here, it is the dish guests write about — one review simply says it is the best spinach pie in my life.

It is vegetarian. It travels well, which is why it is one of the most reliable things you can add to a pickup order. It is not gluten-free — phyllo is wheat pastry.

Why our Greek salad tastes different

Most places pour a bottled Italian vinaigrette over lettuce and call it Greek. Ours is built the other way round: crisp greens, ripe tomato, red onion, olives and a real block-cut feta — then our own house Greek dressing, made in this kitchen, served on the side so nothing wilts on the way to you.

That dressing is the reason the Greek salad is the single biggest non-pizza order on our menu — bigger than any sub, any pasta, any burger. Guests ask for extra containers of it, and we sell it by the side.

Want it as a full meal? Add gyro meat or grilled chicken and it becomes dinner. Prefer something heartier? The Greek Pasta Salad puts rotini, cucumber, tomato, onion and feta under the same house vinaigrette.

Thick Greek yogurt with cucumber, garlic and dill — cool, sharp and made here, not poured from a jug. It goes on every gyro, and you can add a side to anything. Extra tzatziki $2.49.

On our menu as Chicken Lemon Soup. Homemade chicken broth thickened with egg and lemon, with carrots, celery and orzo. The Greek answer to chicken noodle. $5.99

Baklava

Chopped nuts layered between sheets of phyllo, baked and soaked in honey syrup. One piece, two forks — it is sweeter and denser than it looks. $6.00

Greek-style pan pizza, explained

“Greek pizza” confuses half the people who hear it, so here is the short version: it is a New England pan pizza invented by Greek families who opened pizzerias there in the 1960s and 70s. The dough proofs 24 hours in olive oil and bakes in a seasoned pan, so the bottom comes out golden and almost pan-fried instead of thin and floppy.

Eleni’s family brought that recipe south to Sarasota in 2004. Our Large is a true 16 inches — most places around here stop at 14. And if you want the two halves of the menu at once, the Spinachine pie puts spinach and feta straight on the pan crust.
